Whenever I agree to test a food product or cookbook and then write a review, I worry that I won’t be able to recommend either the food product or the cookbook. With Safe Catch, I needn’t have worried. The tuna and the salmon (the two items I sampled) are excellent, both in terms of taste and quality.
For starters, Safe Catch’s products test well in areas of concern for consumers. In addition to being “certified sustainable,” “certified Paleo,” non-GMO, “Whole 30 approved,” and wild caught, they have low levels of mercury. Are the salmon and tuna the “lowest” like it says on the can? To avoid controversy and nit-picking, let’s simply say that they’re “one” of the lowest, with truly minimal differences separating the top-rated brands in a report on mercury content.
If you look closely at the picture of the salad without cheese from the Entree Salad post, you can see the Safe Catch tuna. Other than the few seconds it took to open the can and scoop out the tuna, there was no prep time. The same was true for the Safe Catch salmon I used in a salad a week ago. Definitely a plus. And while we’re counting plusses, add another for texture and a third for flavor.
Canned tuna and salmon were staples when my kids were growing up, but in recent years, I’ve had some issues digesting both. Neither Safe Catch’s tuna nor its salmon caused a problem, a plus that definitely earns both of them a permanent place in my pantry.
The following recipe is from Safe Catch
Cranberry Goat Cheese Tuna Salad with Honey Balsamic Dressing
Salad
2-3 cups mixed leaf lettuce
1 cup Safe Catch Wild Elite Tuna
Soft goat cheese, crumbled to taste
1/3 cup dried cranberries
1/3 cup chopped walnuts
Fresh chopped mint and parsley to taste
Dressing
1/3 cup olive oil
3 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
Salt and pepper to taste
Add your can of Safe Catch Wild Elite Tuna to a small mixing dish and use a fork to flake into pieces. Do not drain.
Assemble your salad by adding lettuce base and topping with goat cheese, cranberries and walnuts, and your garnish of mint and cranberries.
Mix together the ingredients in the dressing in a separate bowl and pour over the salad.
